Asian Quinoa Bowl with Tilapia in 25 Minutes

There is something to be said about simple food. Using a few quality ingredients with names and ingredients you can pronounce and recognize. Now, I don’t always eat this way but I know that eating simply is good for my body. Earlier this summer, I had the opportunity to dine at a really cool restaurant. The premise of the restaurant was simple. Pick a protein, veggies, quinoa or rice, some broth and condiments and your meal is served. It was quick. It was healthy and it was satisfying.

When I came across Bumble Bee Superfresh® Tilapia with Garlic and Olive Oil at my local grocery store, I knew exactly what I wanted to do with them. To prepare the tilapia, I just grabbed the package from the freezer, slipped it into the already included pre-folded parchment bags, popped into the oven and I was ready to go!

While the oven was pre-heating for the fish, I started cooking the quinoa and prepping by veggies.

Actually what makes these Asian quinoa bowls so quick and easy to make is that I used vegetables that were already pre-cut so there really wasn’t a lot of prepping involved.

I found that getting some vegetable broth to a quick boil and pouring it over vegetables was enough to soften the veggies and get it ready for the quinoa bowls. Of course you can use any vegetables you like but since these are Asian quinoa bowls I used matchstick carrots, shitake mushrooms, snow peas and scallions.

You can season to your liken but since the tilapia comes pre-seasoned I didn’t find it necessary to add more seasoning.

Straight from the oven, the quinoa and slightly crunchy veggies was an awesome bed for the tilapia. Some additional broth, a snippet of chives and the dish was done. Simple and delicious.

Who would have thought that the fish came from a bag! No mess, no fuss and no laundry list of ingredients to sort through.

Asian Quinoa Bowl with Tilapia in 25 Minutes

Ingredients
  • 2 packages Bumble Bee Superfresh Tilapia with Garlic and Olive Oil
  • 1 cup quinoa
  • 2 cups water
  • dash of salt (for quinoa)
  • 2 cups vegetable broth
  • matchstick carrots
  • shitake mushrooms
  • snow peas
  • scallions
  • chives

Instructions
  1. Pre-heat oven to 400 degrees
  2. Cook tilapia in parchment paper for 17-20 minutes. (cooking time may depend on oven)
  3. While tilapia is cooking, cook quinoa according to package instructions
  4. Boil vegetable broth medium heat
  5. As soon as it start to boil, pour broth over vegetables and let sit for 5 minutes.
  6. Bowl
  7. Spoon equal amounts of quinoa into each bowl
  8. Ladle some vegetables and broth
  9. Garnish with chives as desired
  10. Top with cooked tilapia and enjoy
